Chef Collective with Diego Oka at Pao by Paul Qui

On May 17th, Faena Miami Beach welcomes celebrated chef David Oka for the next installment of Pao’s Chef Collective Series, a gastronomic event in which chefs from around the world join together to create an innovative menu of unpredictable flavors. Joined by Pao’s Chef de Cuisine, Benjamin Murray, Chef Oka will take to the award-winning restaurant’s kitchen to present a prix fixe menu of Japanese-inspired dishes – a nod to the chefs’ shared Japanese heritage – infused with the flavors and ingredients of traditional Peruvian fare for a truly unique epicurean experience. Born and raised in Lima, Peru, Chef Diego Oka serves as the Executive Chef of La Mar by Gastón Acurio at Mandarin Oriental Miami. Influenced by Peru’s diverse gastronomy and the art of Japanese cuisine, Chef Oka has worked alongside the renowned Chef Gastón Acurio since 2001, perfecting a range of culinary styles and techniques along the way, including Mexican, Columbian and American fare. Introduced to the flavors of his native Japan at an early age, Pao Chef de Cuisine Benjamin Murray also developed a deep appreciation for a diverse range of ingredients during his culinary training. Well versed in the techniques and styles of traditional Cuban and American cuisine, Chef Murray’s dynamic and globally-inspired approach is reflected in his artful dishes and inventive ingredient pairings, placing him at the forefront of Miami’s budding culinary scene.
